Vin Alto is the first Vineyard in Australasia to make this traditional Italian Desert wine.
The name Vin Santo translates to 'Holy Wine' as it was traditionally the wine used at Communion. It is a dessert wine made from Pinot Grigio and Chardonnay grapes. The grapes are set out to dry on racks for up to three months and when their juices are reduced to syrup, the must is fermented for some years in barrels. The drying process concentrates the grape sugars and gives the wine its distinctive flavour, complexity and elegance.
It is a pale golden wine with a bouquet reminiscent of white flowers and honey. It is full bodied and sweet with the balanced acidity and long-lasting finish characteristic of a superior dessert wine. It has tropical fruit flavours of pineapple, guava and lychee, with a honeyed and nutty finish.
Vin Santo is delicious served after the meal with biscotti or paneforte. Italians traditionally dip cantucci almond biscuits into the wine.
